Formal Venue Hire for an Evening Affair
Lend Lease, a global pioneer in property and infrastructure investment, hosted their annual leaders dinner and Cuisine on Cue had the privilege of catering for this special corporate function. The dinner was held at the Old Museum – a venue where Cuisine on Cue has exclusive catering rights – and with the help of Neals Hire and The Prop House, Studio One of The Old Museum was a vision of elegance and revelry.

Corporate Catering Example: Canapés
One hundred and seventeen guests, including Guest of Honour, Deputy Premier Jackie Trad, were welcomed on the Old Museum’s picturesque balcony where Cuisine on Cue laid a culinary foundation with a selection of canapés. Shredded chicken was served on a chipotle palmier with grapefruit segment and pork belly was served with black pepper caramel, red radish and mint salad – providing both a dairy free and gluten free option. Rounding out the canapés was a vegetarian option in the form of Parmesan custard tartlets with grilled asparagus. We take pride in being able to accommodate special dietary needs and on this night there were eight unique dining requirements to be catered to both within the evening’s set menu and with dishes made special.
Members of Brisbane’s best catering staff then helped diners to their arranged seats where tables decorated by beautifully crafted centre pieces (provided by the Prop House) waited with fine cutlery, napkins and a pair of wines. A choice between a Leeuwin ‘Art Series’ Riesling and an Oakridge ‘Over the Shoulder’ Cabernet Merlot adorned each table with both still and sparkling water available to guests. For diners thirsty for something else, table service was on hand offering Cascade Premium Light, Peroni Nastro Azzuro and a range of soft drinks.

Plated Dinner
When the guests were seated, entrees were served with alternate drops of grilled tiger prawns in a chilli bisque tea (served with rice noodles, fresh herbs and kipfler coins) and lamb backstrap dusted in North African herbs (served with vegetables and a herb salsa).
The main course soon followed with grilled eye filet in a red wine jus, accompanied by French peas, kipfler potatoes and baby carrots, and pan fried barramundi fillet in a champagne sabayon with fondant potato and grilled asparagus.
Dinner was capped off with mixed cheeseboards being delivered to each table offering guests a selection of aged cloth cheddar, French blue, triple cream brie and parmigiano reggiano. The desert cheeses were served on wooden boards with whole bunches of dried muscatels, house made lavosh and ciabatta and freshly brewed coffee was served along with a selection of tea.
